Shouldn't the jersey articles be re-written by concept, rather than colour? What I mean is, have a page called "King of the Mountains", and in there explain what colour jersey is awarded in each event. —Preceding

Yes, and such articles do exist (a bit bare though they are). I think articles like this should best be considered as disambiguation pages, even if they aren't
WP:DAB pages in the classic sense. Currently
yellow jersey redirects to
General classification in the Tour de France. While this is probably the most likely article a reader who enters "yellow jersey" into the search bar is seeking, the TDF is far from the only race that awards a yellow jersey. Consider
White jersey. Not a dazzling article by any stretch, but it's a good indication of an article that can comfortably disambiguate between different jerseys of the same color in different races.
