Yes, I'm not sure either. These three are all hyphenated (at the moment): Pouilly-Fuissé, Pouilly-Loché and Pouilly-Vinzelles. But had assumed that that was because they were all place-names, whereas Fumé was not. But if French wiki has it then....

That is a good point regarding place names and you usually do see those villages always hyphenated. Still, I don't think there is any harm in posting an RM with a low risk of this becoming "contentious". I'm sure you're not the first reader to raise an eyebrow at seeing Pouilly-Fumé hyphenated and it probably would be helpful to have a consensus driven discussion on the topic with outside views introduced.
