Restigouche

It is misleading to refer to Restigouche as Acadian-but-bilingual. The majority of citizens are Acadians (who tend to be fluently bilingual) but there is a substantial Anglophone population in eastern Restigouche of mainly Scottish descent, with some Irish in the Jacquet River area. The older Anglos tend to be unilingual -- or at least don't speak French, even if they can understand a great deal of written and spoken French. The younger Anglos are more likely to be bilingual due to changes in schooling in the last twenty years.
