Red beans used in red beans & rice are not kidney beans
The nutritional info box shows values for uncooked beans, but since the usual way to eat them (which is how nutrition affects people) is to eat them cooked.
It's a non-controversial change (in my eyes) but it will take a few minutes work and I had bad experiences recently with long-time editors instant reverting anything by newbies, so I thought I'd clear it here first.

It would be interesting (and an improvement to the article) if some knowledgeable person could explain the origin of 'cannellini' (as applied to these beans).

Bad Bug Book update
I have removed a reference to the
first version of FDA's "Bad Bug Book" along with the "five fold" potentiation claim. I made a few google searches to find a source for any potentiation, but the best I could find was
this unsourced SE post. Given that the FDA has removed the claim, I think it makes sense for us to remove it if we cannot source it. -
