The supposedly "Latin" name of the university is Spanish through and through. Is that name official in any capacity and if so, could we specify that it is its official Spanish appellation?

The name "Universidad de Extremo Oriente" cited here as a Latin name is Spanish through and through. In [
[1]] you will find a Spanish-speaking Filipina writer using said Spanish name to refer to the university. Is this name official in any capacity and if that were the case, can we list it as its official Spanish appellation?

I removed it from the article altogether. A
WP:RS citation (there wasn't one) would be needed to clarify the language, context, or use of this phrase.
