Currently this article is called "Capture of the Wadi el Hesi" but I wonder if "Capture of Wadi el Hesi" (removing the "the") would be more grammatically correct?

Yes I think your recollection is correct (i.e. "the" was added to that title), but its not grammatically the same (at least to my ear). I'm not 100% on rules of grammar but I think as a place name "Wadi el Hesi" wouldn't seem to require the definite article (e.g. we wouldn't write "Battle of the Albury-Wadonga" - we would present it as "Battle of Albury-Wadonga"); however, "Beersheba to Hafir el Auja railway" would seem to need it (e.g. we would probably use the definite article here: "Capture of the Sydney-Canberra railway", not "Capture of Sydney-Canberra railway").
