As was not uncommon, his surname is a reversal of the slave owner's name, who was called Mok.
An extensive study was conducted and published (2003) by Okke ten Hove, Heinrich E. Helstone & Wim Hoogbergen (ISBN 90-5170-777-0) concerning the process of administration of slaves and their names (pages 44-47). These authors have also created a database containing all names of the slaves that is maintained online by Dutch national archives. See http://www.gahetna.nl/collectie/index/nt00341. Nowhere in their book the convention "reversal of the slave owner's name" is mentioned. Another point is that the owner of the slaves working and living on Plantage Molshoop, were Anton's parents lived in 1863 was Hendrik Jan Veldwijk (this can be verified online). The authors of "Anton de Kom, biografie" (ISBN 978-90-450-3282-5) state on page 15 that Doortje (grandparent) chooses the surname De Kom for unknown reason.
